If it dries out, just give it a good rub with mineral oil. It's foodsafe and won't go rancid (like olive or vegetable oil might). I just pour some on, let it soak in for a minute, and then rub the excess off with a paper towel. If you think of it, send me a photo of the cutting board in action sometime!
